I love Italian buttercream! In fact I was becoming quite the expert. However, comma, I have met my match: Pasteurized egg whites! They are my arch enemy! They take FOREVER to whip and get peaks to allow me to add my tons of delicious butter. Well after much a whipping (thanks to my KitchenAid, shout out to the parents!) Finally, I got peaks!
It turned out just as delicious as it should. I used Joshua John Russell's recipe and it never fails. A couple of tweaks had to be made for the pasteurization (thanks to eHow.com) and behold, wonderful light and fluffy and butterrific buttercream! Now for my design for an 11 year old Twigh-Heart! Yaay!
